Fior delle Alpi
Cheese Soufflé
Ingrédients
- 150 g Fior delle Alpi, grated
- 4 soufflé ramekins (each approx. 1 dl content)
- Butter or oil for the ramekins
- 3 eggs
- 250 g curd cheese
- Some salt, pepper, nutmeg
- 4 tbsp chopped herbs, such as thyme, parsley, chives
- 4 tbsp corn/maize grits (fine)
Préparation
- Grease the ramekins and place aside.
- Separate the eggs and beat the egg whites with 1 pinch of salt until stiff.
- Mix curd cheese, spices, herbs, grits and Fior delle Alpi with the egg yolk.
- Carefully fold egg whites into this mixture. Distribute mass into the ramekins.
- Bake in the middle of the preheated oven at 180°C for 20-25 minutes. Do not open the oven during baking. Serve immediately.
