Jura Montagne
Pumpkin Soup
Ingredients
- 800 g pumpkin
- 200 g carrots
- 4.5 dl vegetable bouillon
- 1 red onion
- 2 cloves of garlic
- 50 g cashew nuts
- 1 piece of ginger (approx. 2.5 cm wide)
- 1 tbsp curry powder
- 1 tbsp turmeric
- 100g Jura Montagne
Preparation
- Prepare the pumpkin, carrots, onion and garlic cloves, dice them and put them in a pan with all ingredients except the Jura Montagne.
- Simmer for 25 minutes, puree.
- Crush Jura Montagne into splinters and sprinkle generously over the soup.
Tip: Refine with roasted pumpkin seeds and/or pumpkin seed oil.
