Fior delle Alpi
Eggplant Rolls
Ingredients
- 200 g Fior delle Alpi
- 2 eggplants
- Olive oil
- ½ bunch of basil
- Salt, pepper
Preparation
- Cut the aubergines lengthwise into thin slices. Cut Fior delle Alpi into longish sticks.
- Season the aubergine strips and fry in olive oil on both sides until golden brown, remove and leave to cool.
- Cover the aubergine strips with a piece of Fior delle Alpi and a basil leaf, roll up and close with toothpicks.
