Beef Medallions with Winter Vegetables
Ingredients
Mixed vegetables:
- 350 g sweet potatoes
- 350 g pumpkin (hokkaido or butternut)
- 200 g beets (raw)
- 1 tablespoon fresh ginger, grated
- 120 g cashew nuts
- 4 tbsp olive oil
- 1 tsp salt
- Pepper and nutmeg to taste
- Some rosemary twigs
Beef medallions:
- 12 beef medallions (each approx. 2 cm thick)
- 12 slices of bacon
- 150 g Lustenberger 1862
- 100 g red pepper
- 50 g pecans
- 6 tbsp flour
- 6 tbsp oil
- 3 tbsp chopped chives (fresh)
- Salt, pepper
Preparation
- For the vegetable side dish, wash and peel the sweet potatoes, prepare the pumpkin and cut everything into slices. Cut the edges very finely (maximum 0.5 mm thick slices). Put everything in a gratin dish.
- Add ginger, cashew nuts, salt, pepper, nutmeg, rosemary and olive oil and stir well.
- Bake at 180 °C for about 30 minutes.
- In the meantime, wrap the beef medallions in bacon. Brush a gratin dish with oil and add the medallions.
- Grate Lustenberger 1862 finely, cut peppers into very small cubes, chop pecans finely, mix with flour, oil, thyme, salt and pepper and form 12 scoops.
- Place a ball on each medallion and bake for 25 minutes in the 180 °C oven.
